Helpful to know before you convert
Conversion quality depends far more on your source file than on any setting. A digital PDF needs no character recognition at all and is the most reliable route by a wide margin. A flat 300 DPI scan comes next. A phone photograph can work well, but a low-resolution or angled shot gives the recogniser too little to work with β and that, rather than any bug, is behind the large majority of imperfect results.
